The perfect sun-dried tomato hummus has a balance of sweet, sour, salty, umami, and spicy. I created this recipe by reading dozens of other recipes and trying them out, eventually combining elements from many of them to form what I believe to be the perfect recipe.
Sun-dried Tomato Hummus Recipe
This recipe will make a large bowl of hummus, enough to last a week of dipping for you and your household.
2 medium lemons
2 (1 lb.) cans of garbanzo beans
1/2 cup extra virgin olive oil
4 tablespoons tahini
2 teaspoons ground cumin
2-3 cloves of garlic
1-2 ounces of water (preferably from the can)
7-8 big sun-dried tomato leaves (with oil from can)
2 teaspoons salt
1 tablespoon pepper
1 tablespoon paprika (optional)
Mix in Food Processor or Blender
Take all ingredients and blend in food processor or blender
Salt, water, olive oil and garlic can be added to create the desired taste
After pouring everything into a bowl, drizzle with olive oil and sprinkle on some paprika to make it look beautiful
